No question MTU can cause problems. Often when you can see files and browse successfully, but fail when opening or copying files, it is an MTU issue. PPTP VPN's require an MTU of 1430 or less. I assume if you are using the WatchGuard you are using IPSec, for which I have never seen a specific MTU requirement.
So I just found out the hard way that glorious Windows 7 does not support Option 26 from DHCP. I have Offices that are connected to HQ via shitty MPLS or so it seems, as the old Scopes all have reduced MTU Sizes in the Options. Requests that are sent with 1500 never arrive.
